Try this for a healthy vegan snack – these Superfood Vegan Energy Balls are a delicious and healthy, sweet treat. Also anti-inflammatory, nobody will know they’re healthy! They contain three of my favorite foods – cacao nibs, oats and you guessed it, peanut butter!
Cacao Nibs
Cacao nibs are packed with antioxidants, iron and magnesium and don’t have any whole sugars. Besides this recipe, I top my smoothies with this superfood and put it on oatmeal and my homemade trail mix. I use the Navitas brand from Thrive Market also found at many whole foods stores.
Oats – Now a Superfood?!
Oats and oatmeal have always been known as a healthy grain, packed with nutrients, fiber and protein. Now there are studies that suggest oats are also a superfood working as an anti-inflammatory agent in the body. I’m all for it, I LOVE oatmeal. I’m 100% addicted to FitFoodieFinds Overnight Oats. YUM.
Flaxseed
I love that writing this blog about living an anti-inflammatory lifestyle I learn so much! Did you know how great flaxseeds are for reducing inflammation? Check it out peeps – people have been noshing on flaxseeds for around 6,000 years so these guys have been “around the block”. All kidding aside, they are probably one of the first “superfoods”
Why are they so great? Flaxseeds contain anti-inflammatory omega-3 fatty acids (although not the same type that fish, such as salmon, do) along with antioxidant substances called lignans that help promote hormonal balance, plus some other cool benefits. They also help improve digestion, give you clearer skin (who doesn’t want that?!), lower cholesterol, reduce sugar cravings, and even help fight cancer.
Vegan Superfood Energy Balls

- 2 cups whole oats
- 1 cup ground flaxseed
- 1 tsp cinnamon
- 1/2 cup honey
- 2 tsp vanilla
- 1/2 tsp sea salt
- 1 cup natural peanut butter (honey peanut butter is a nice option)
- 1 cup cacao nibs
Instructions
Spread in greased 9×13 pan and sprinkle cacao nibs on the top. Cover and refrigerate overnight. Cut in squares and roll each square into a ball. Store superfood balls in refrigerator in a covered container. Also can be frozen and taken out as needed.
