The Best Immune-Boosting Raspberry Dark Chocolate Fudge

What’s both immune-boosting and tastes like raspberry and chocolate? Raspberry Dark Chocolate Immune-Boosting Fudge! Not everything that’s good for your immune system has to taste like bone broth and broccoli.   We deserve some good things and good-for-you things during this quarantine – so here come the berries and chocolate!

Immune-Boosting Ingredients

Let’s talk about these two first before we dig into the recipe. It will make you feel that much better about boosting your immune system with something that tastes like it couldn’t possibly be good for you!

Raspberries

Berries are excellent for immune function in general. Despite being low in calories, raspberries pack a nutritional punch with 1 cup containing just 64 calories, but 8 grams of fiber, 64% of the RDI (Reference Daily Intake) of Vitamin C, and 41% of the RDI for Manganese. Vitamin C is essential for immune function and iron absorption. Manganese is known for its role in bone health but it’s also part of the antioxidant enzyme superoxide dismutase (SOD). SOD is one of the most important antioxidants in your body because it converts free radicals into smaller molecules that won’t cause damage to your body.

Dark Chocolate

Now for your favorite and mine, did you know the darker the chocolate, the better the health benefits? The cocoa in dark chocolate contains high levels of flavonoids which are another kind of antioxidant that protects our cells from damage and inflammation. Dark chocolate is also rich in iron, magnesium, and zinc. Besides immune function, another bonus of eating dark chocolate is it may improve brain function. In a 2018 study, findings suggest the flavanols in dark chocolate may enhance neuroplasticity, which is the brain’s ability to reorganize itself, particularly in response to injury or disease.

Almonds

Almonds are high in vitamin E which acts as an antioxidant in your body and helps with immune function.. The antioxidant properties help with cellular function and help ward off any invasive bacteria. Almonds also have an impressive array of nutrients. They’re packed with 3.5 grams of fiber per ounce, 6 grams of protein and also rich in magnesium and manganese.

The secret ingredient that gives these the buttery taste is almond butter. Here comes the recipe!

Raspberry Chocolate Immune Boosting Freezer Fudge

Easy Delicious Fudge for an Immune System Boost!

Course Dessert

Prep Time 15 minutes

Ingredients

  • 1 ½ cups almond butter
  • ½ cup coconut oil (melted)
  • 1 ½ tsp vanilla
  • ½ cup cocoa powder
  • 2 tbsp plant-based collagen (or vanilla plant-based protein powder)
  • ⅓ cup freeze-dried raspberries plus ⅓ cup for the top
  • ½-1 tsp flaked pink sea salt

Instructions

  1. 1. Grease square glass pan with coconut oil spray.

  2. 2. Melt coconut oil in microwave-safe bowl.

  3. 3. Soften almond butter in microwave safe bowl then add melted coconut oil and vanilla. Mix.

  4. 4. Mix in cocoa powder, then stir in gently, freeze-dried raspberries.

  5. 5. Pour in prepared pan. Top with remaining crushed raspberries and sea salt.

  6. 6. Place in freezer for 30 minutes to an hour or until set.

  7. 7. Cut in squares and enjoy!
